Chire-bhaja (Roasted Flattened Rice)

Chire bhaja or roasted flattened rice used to be a very popular snack back home in Bengal. Maa used to make this as an evening snack. It's a quick recipe and can be made easily within 15 minutes with very basic ingredients; but the taste is just unbeatable. With the new found love for fast foods like pizza and burger, the new generation is slowly losing touch with traditional dishes like this one; but I am sure back home all our mom(s) and grandma(s) still prefer these over their Western replacements. This time even I tasted Chire bhaja after a long while. Apologize for having only one picture as I was not initially planning to blog it, but later I thought why not share the recipe with you all. Hope you will like it as well.

Chire/Poha/Flattened Rice - 2 Cup (Thin Variety)
Onion - 1/4 Cup (Chopped)
Ginger - 1 Tbsp (Finely Chopped)
Peanuts - 1/4 Cup
Dry Red Chili - 2
Green Chili - 1 (Optional)
Bayleaf - 1
Salt - According to Taste
Turmeric - 1 Pinch
Cilantro (Optional)
Curryleaf - 8/10 (Optional)
Mustard Oil - 1 Tbsp

Dry roast the peanuts in a kadhai. Let it cool down and then peel the peanuts.
Heat oil in kadhai. Add the bayleaf, dry red chili, curry leaf and fry for about 10 seconds.
Next add the onion and ginger and fry on medium flame till it becomes translucent.
Now add the flattened rice, peanuts and mix well. Add salt and turmeric powder. Keep frying it on medium flame until the flattened rice becomes translucent and crunchy.
Finally sprinkle chopped green chili and chopped cilantro on the top while serving.
